MEXI-KIT Chicken Tinga & Chorizo Tacos (Recipe)

So the big day has arrived, your tacos have arrived at your doorstep and you are filled with excitement to tuck into your meal. All that is left to do is prepare your food fiesta in 5 minutes!

Unpack and separate your ingredients, we have labelled some of them for ease.

1. First, empty the chicken into a pan with a splash of water to loosen the mixture. Cook over medium heat for 5-6 minutes or until the chicken is piping hot throughout. If the mixture is too dry, add a small splash of water to loosen it. 

2. Heat a dry non-stick pan on high heat. Place each tortilla and cook for approximately 30 seconds per side. If the tortilla is too dry, add drops of water to the pan or if you prefer a crispy tortilla, add a drop of oil - It should be soft with a few dark spots.** Remove from the pan whilst you cook the remaining tortillas. 

3. Lay the warm tortillas out, add a spoonful of the chicken mixture and dress with the crema, onions and corriander, pickled onions and a generous spoonful of your chosen salsa!

*If you have ordered a Build Your Own Fiesta (BYOF) then just follow step 1 to cook the meat & step 2 to cook the tortillas. 

**If you have ordered a Chicken Tinga Quesadilla, at this stage add the chicken mixture to the tortilla, then add cheese before placing another tortilla on top, flip and cook for another 30-45 seconds.
